Grâce à une approche exhaustive des sources, cet article propose une analyse des pratiques d’élevage associées à la stabulation et au parcage, considérant ces lieux comme les témoins privilégiés de l’interaction entre l’être humain et l’animal dans un contexte productif. Il s’intéresse tout particulièrement aux bâtiments et aux enclos ayant accueilli du bétail, afin de déterminer différents modes d’élevage et pratiques zootechniques. Cet article propose aussi une première typologie des étables, dans le but de mieux appréhender l’organisation spatiale et sociale de la production de viande et de produits secondaires animaliers.

This article analyses the raising practices associated with animal housing according to all the available sources, considering these buildings and enclosures as privileged witnesses of the interaction between humans and animals in a productive context. It focuses on the buildings and enclosures to identify different husbandry and zootechnical practices. Through the analysis of texts, scenes, and archaeology, this article also proposes a first stable typology with the aim of better understanding the spatial and social organisation of the production of meat and secondary animal products.

بفضل اتباع نهج شامل للمصادر، تطرح هذه المقالة تحليلًا لممارسات تربية الحيوان المرتبطة بالحظائر والزرائب، باعتبار هذه الأماكن شاهدًا مميزًا للتفاعل بين البشر والحيوان داخل إطار إنتاجي. كما تُركز بشكل خاص على البنايات والسياجات التي كانت تأوي الماشية، بغية تحديد طرق التربية المختلفة وممارسات تقنيات تربية الحيوان. كما تعرض هذه المقالة دراسة تصنيفية أولية للحظائر، من أجل فهم أفضل للتنظيم المكاني والاجتماعي لإنتاج اللحوم والمنتجات الحيوانية الثانوية.
