The excavation of five baths used during the Byzantine and Umayyad periods in Syria (Qal’at Sem’an, Bosra), Jordan (Jerash, Khirbet edh-Dharih) and Palestine (Umm al-‘Amr) allowed sampling charred remains in the heating system of the baths or around them. The samples were submitted to seeds and fruits analysis as well as charcoal study in order to identify the type of fuel used to heat the baths. The fuel is composed of various wild and cultivated plants which can grow in the neighboring of the studied sites. Plant by-products linked to the management, the harvest or the processing of olives, cereal and grapevine are particularly noticed.
